Midnight Indulgence

began, as many good things do, at an hour when most tables had already gone quiet.
That hushed moment is where the idea took shape, not as a business, but as a pursuit of something better: moments that slow time, spark conversation, and turn evenings into memories.
We don’t compete on volume; we compete on the pause. The quiet second when a mother-of-pearl spoon meets caviar. When conversation softens, Champagne is poured, and anticipation builds. That is the experience we protect.
Everything else, from the chilled packaging to the crème fraîche, the blini, and the spoon nestled in the box, exists to serve that moment. Because luxury isn’t just what you serve. It’s how it makes people feel.
Three tins
for the
Table.
Oncorhynchus mykiss
Bourbon Smoked
Vivid coral pearls, crisp and bright with a soft, smoky finish. Made for warm blini, a touch of crème fraîche, and a weeknight, elevated.
Trout Roe
Scaphirhynchus platorynchus
Hackleback
Ink-dark pearls, firm and creamy with a gentle, earthy finish. Made for long tables, borrowed time, and a Saturday that refuses to hurry.
Caviar
The three we recommend when asked what to try first — one for a Tuesday, one for a Saturday, and one for the night you have something to celebrate.
Acipenser gueldenstaedtii
Imperial
Honey-gold pearls, buttery with an elegant nutty finish. Made for raised glasses, a bottle of vintage Champagne, and the moments worth remembering.
Osetra

Some things
are worth for.
Every tin is packed the morning it ships, cored with ice, and dispatched to arrive before your next dinner — never before, never later.

Caviar,
How To Serve
Properly.
Four small acts, in order. Follow them, and the tin will tell you when it’s ready.

Chill the tin.
Serve simply.
Rest the closed tin in a bowl of crushed ice for fifteen minutes. Never freeze it. The pearls tell you when they are ready: they will feel firm to the spoon.
Choose the spoon.
Mother-of-pearl, bone, or horn. Never metal — it can leave a faint metallic taste that competes with the caviar itself.
A blini with crème fraîche, a warm crumpet, or the back of your hand between thumb and forefinger. The finer the caviar, the fewer the accompaniments.
Pair, quietly.
Blanc de Blancs Champagne or a well-chilled Junmai Ginjo sake. Ice-cold vodka, if the hour has passed midnight. Nothing sweet.

A note on tasting.
Place a modest spoonful — about the size of a quarter — on your tongue and press it gently against the roof of your mouth, letting the pearls surrender in their own time. Three notes reveal themselves: the initial brine, the pearls’ soft pop, and the finish that lingers. The finish is where a great tin distinguishes itself from a merely good one.

Questions,
answered.
Everything a first-time client tends to ask, in one place.
For an appetizer or a few elegant bites, plan on about 15–30g (½–1 oz) per person. For caviar as a featured course or the centerpiece of a celebration, 30–50g (about 1–1¾ oz) per person is ideal.
As a guide:
-
30g: a tasting for one, or an appetizer for two
-
50g: an indulgent evening for two
-
125g: an appetizer for 4–8 guests
-
250g: a celebration for 8–16 guests
When in doubt, err on the side of generosity. Caviar is, after all, an occasion.
Your caviar is packed in an insulated container with gel packs and shipped overnight, so it arrives at peak freshness. We ship Monday through Thursday within the contiguous US, so your order never sits in transit over a weekend.
Orders placed by 12 p.m. ET Monday through Thursday ship the same day. Orders placed after the cutoff Monday through Wednesday ship the next day. Orders placed after the cutoff on Thursday, or anytime Friday through Sunday, ship the following Monday. You’ll receive a tracking number by email as soon as your order is on its way.
We’re unable to ship to P.O. boxes. Please be available to receive your delivery and refrigerate the tin immediately upon arrival.
If anything isn’t right, contact us at concierge@midnightindulgencecaviar.com within 24 hours of delivery, with a photo of the product and packaging.
Caviar is happiest at 26°F to 38°F. Its natural salt content keeps it from freezing at these temperatures. Since most home refrigerators run a little warmer, store it in the coldest spot, typically the back of the bottom shelf, and never in the door. For extra chill, nestle the tin in a bowl of ice inside the refrigerator, replenishing the ice as it melts. Keep tins sealed and lying flat. Do not freeze, as this will damage the delicate texture of the roe.
Unopened and kept in the coldest part of your refrigerator, your caviar will keep beautifully until the best-by date printed on the tin. Once opened, press the lid back on tightly and enjoy it within 2–3 days.
Please don’t freeze caviar. Freezing damages the delicate pearls and changes their texture.
Freshness speaks for itself. If your caviar smells sour or overly fishy, or the pearls look cloudy or mushy, it is past its prime and should not be eaten. When in doubt, discard it.
Serve caviar well chilled, ideally straight from the tin. Keep the tin nestled in crushed ice from the moment you open it until the last spoonful.
Use a mother-of-pearl spoon, such as our Petite Mother-of-Pearl Caviar Spoon or the Midnight Pearl Spoon. Metal spoons, especially silver, can lend a metallic taste to the roe.
Taste the first pearls on their own to appreciate their full character. Then try the classic bite: warm blini with a touch of crème fraîche. Traditional garnishes like hard-boiled egg and chives are welcome additions. Just take care not to overwhelm the caviar’s natural complexity.
For drinks, try Blanc de Blancs Champagne, a well-chilled Junmai Ginjo sake, or ice-cold vodka served neat.
How much to serve: plan on about 15–30g per person as an appetizer, or 30–50g per person for a dedicated tasting.
Above all, go slowly. Caviar is meant to be savored.
Each variety offers a distinct flavor, shaped by the fish it comes from.
Beluga is the most legendary caviar in the world, known for its large pearls and creamy, buttery flavor. Wild Beluga caviar cannot be imported into the US, so we offer a Beluga Hybrid, a farm-raised cross of Beluga and sterlet sturgeon. Its medium, shimmering gray-black pearls carry Beluga’s signature creaminess with a clean, briny finish.
Kaluga, often called “River Beluga,” is one of the largest freshwater fish in the world. Our Kaluga Hybrid, a farm-raised cross of Kaluga and Amur sturgeon, produces some of the largest pearls available, over 3mm, with a mild, subtly creamy flavor.
Osetra is celebrated for its firm pearls and buttery, nutty character, the caviar connoisseurs return to. We offer two grades: Royal Osetra, with gray-to-olive pearls and a whisper of hazelnut, and Imperial Osetra, the rarer light grade, with large honey-gold pearls.
We take sourcing seriously. Wild sturgeon populations have been severely depleted by overfishing, which is why our sturgeon caviars, including Royal and Imperial Osetra, Siberian, Kaluga Hybrid, and Beluga Hybrid, come from farm-raised fish.
Our two American caviars are the exception. Hackleback and Paddlefish are wild-caught in US rivers through licensed American fisheries, which operate under state seasons and permits.
All imported caviar arrives with the CITES documentation required by international law for sturgeon products, so every tin can be traced to its legal source.
Absolutely. Few gifts make a more lasting impression. Our gift sets arrive in our signature black gift box with a Petite Mother-of-Pearl Caviar Spoon and a Midnight Key, and you can add a personalized note at checkout.
Because caviar is perishable, every order ships overnight, Monday through Thursday, within the contiguous US. We recommend giving your recipient a heads-up so they can refrigerate it on arrival.
For a birthday, an anniversary, a holiday, or simply to say thank you.
We accept all major credit cards [and PayPal, if enabled]. Payment is processed securely at checkout.
Because caviar is perishable and our mother-of-pearl accessories are delicate, all sales are final. If any part of your order arrives damaged or below our standards, contact us at concierge@midnightindulgencecaviar.com within 24 hours of delivery, with a photo of the product and packaging, and we will make it right with a replacement or refund.
Please double-check your shipping address at checkout. We’re unable to replace orders delayed or spoiled due to an incorrect address or a missed delivery.
We stand behind every tin.
